Raw lettuce is mild, watery, and very lightly bitter, with crispness that ranges from delicate in butter lettuce to sturdy in romaine. Heat wilts it instantly into a silky, neutral green with almost no flavor of its own, which makes it an easy nutrient-booster in eggs and purees without changing the taste. It pairs naturally with lemon, olive oil, eggs, avocado, soft cheese, and mild grains.

Soft butter lettuce or romaine leaves, torn small. Introduce gradually - the texture can be tricky. Best mixed into other foods early on.

Serving ideas

  • -Finely shred romaine and mix into soft scrambled eggs or ricotta on toast strips.
  • -Stir wilted lettuce into soft noodles or rice with a little butter and parmesan.
  • -Blend wilted leaves into a mild green soup with potato and leek.

Lettuce and Egg Soft Scramble

From 9 months

Ingredients

  • -2 eggs
  • -2 large romaine or butter lettuce leaves, very finely shredded
  • -1 tsp unsalted butter
  • -1 tbsp whole milk or formula

Steps

  1. Crack eggs into a bowl, add milk, and whisk until fully combined.
  2. Melt butter in a small nonstick pan over low heat.
  3. Add the shredded lettuce and stir for 30 seconds until just wilted.
  4. Pour egg mixture over the lettuce and cook over low heat, stirring slowly and constantly, for 2 to 3 minutes until just set and still soft.
  5. Remove from heat while eggs are slightly underdone as they continue cooking off the heat.
  6. Serve in small, soft pieces. The egg keeps the lettuce fully integrated so there are no loose leaf pieces.
