Roasted Butternut Squash Puree

Ingredients

  • -1 small butternut squash (about 2 lbs)
  • -1 tbsp unsalted butter or olive oil
  • -1/4 tsp ground cinnamon
  • -2 to 4 tbsp water or unsalted vegetable broth

Steps

  1. Preheat oven to 400 degrees F. Halve the squash lengthwise and scoop out seeds.
  2. Brush cut sides with butter or olive oil and place cut-side down on a lined baking sheet.
  3. Roast for 40 to 50 minutes until flesh is completely tender and a fork slides in without resistance.
  4. Scoop flesh into a blender or food processor.
  5. Add cinnamon and blend, adding water or broth one tablespoon at a time until smooth and spoonable.
  6. For 9 months and older, mash with a fork and leave slightly chunky for texture practice.
