Lemon Cucumber and Avocado Mash

From 6 months

Ingredients

  • -1 ripe lemon cucumber, peeled, halved, and seeded
  • -1/2 ripe avocado
  • -1 tsp fresh lemon juice
  • -1 tbsp full-fat plain yogurt (dairy is a top allergen, introduce separately first)

Steps

  1. Peel the lemon cucumber and cut in half. Scoop out any seeds with a spoon.
  2. Grate the cucumber flesh on the large holes of a box grater. Squeeze out excess water with your hands over the sink.
  3. Mash avocado in a small bowl until smooth.
  4. Fold grated cucumber, lemon juice, and yogurt into the avocado.
  5. For 6-8 months, serve on a preloaded spoon. The avocado provides healthy fats and the cucumber adds a mild, cooling flavor.
  6. For 9 months and older, serve as a dip alongside soft toast strips or steamed vegetable spears.
